A sweet recipe using a great tasting Jamaican jerk-bq sauce. Absolutely
delicious.
INGREDIENTS
5 lbs tilapia fillet
2 cups tomatoes diced
¼ cup honey
¼ tsp salt
¼ tsp black pepper
1 cup Jamaican jerk-bq sauce
PREPARATION
1. Scar the fish on both sides and marinate with the sauce outside and
inside fish then cover in honey.
2. Place fish on hot grill 'till seared on both sides the set aside.
3. Place foil on grill, oil. Return fish onto foil pour in marinade from
dish and wrap tightly and allow to steam in its juices for about half an
hour.
4. Add the tomatoes, for 10 minutes then remove and serve with roast
yellow yam, breadfruit and tomatoes.
