A tasty delight of a Jamaican Jerk Sandwich |

ingredients |

2 tbsp butter |
|
¼ cup flaked fillet fish |
|
½ cup mayonnaise |
|
¼ tsp black pepper |
|
4 deboned chicken breasts |
|
1 lg onion sliced |
|
4 sandwich buns |
|
6 lettuce leaves |
|
6 slices tomato |
|
½ cup Jamaican jerk sauce |

preparation |
|
1. Melt butter in skillet, sauté fish and chicken until tender. |

2. Combine mayo and seasonings. Mix well. Remove skin and fat from
chicken. |
|
3. Pound slightly with fine side of meat tenderizing mallet. |
|
4. Cut in half down natural seam, eliminating any cartilage at center. |
|
5. Season with salt and pepper. |
|
6. Grill chicken over med heat turning and basting with jerk sauce. |
|
7. Slice and warm buns. |
|
8. Spread inside of buns generously with flavored mayo. |
|
9. Place chicken and fish slices on the bun, top with lettuce, onions
and tomato and other bun half. |
