INGREDIENTS |

2 tbsp Juice lemon |

2 tbsp Juice lime |
|
1 tbsp Dijon mustard |
|
1 Scotch bonnet pepper diced |

1 garlic finely chopped |
|
1 pinch salt and black pepper |
|
1 stalk escallion diced |
|
¼ tsp dried thyme leaves |

4 Chicken breast halved |

PREPARATION |
|
1. In a shallow dish
or plastic bag, combine 3 tbsp water and all ingredients except chicken. |

2. Add chicken,
coating well with marinade. Cover dish or seal bag; marinate in
refrigerator 4 hours or overnight. |

3. Prepare outdoor
grill or preheat broiler. |
|
4. Remove chicken
from marinade; pour marinade into small saucepan and bring to a boil. |
|
5. Grill or broil
chicken 15 to 20 minutes, turning occasionally and basting frequently
with marinade. |
