A jerk fish recipe from Whitehouse in Westmoreland try it today. |

ingredients |

8 lbs fish fillet |
|
1 cup mashed tomatoes |
|
¼ cup honey |
|
¼ tsp salt |
|
¼ tsp black pepper |
|
½ cup Jamaican Jerk Seasoning |
|
½ cup Jamaican Jerk Sauce |

preparation |

1. Blend or mash the sauce ingredients together. Scar the fish on both
sides. |

2. Marinate with the sauce outside and inside fish. |
|
3. Pierce tomatoes with a fork three times on all sides. |
|
4. Cover in honey and salt and marinate overnight. |
|
5. Place fish on hot grill ‘till seared on both sides. Remove. |
|
6. Place foil on grill, oil. Return fish onto foil, pour in marinade
from dish and wrap tightly. |

7. Allow to steam in its juices for about half an hour. |
|
8. Meanwhile, grill the tomatoes, turning evenly so as not to allow
burning. |
|
9. Serve with roast yellow yam, breadfruit and tomatoes. |
